Caldo Verde (Portuguese Kale Soup)

Growing up Caldo Verde (Portuguese kale soup) was a staple especially over the cool months. This creamy rustic soup made with potatoes, kale and chorizo is hearty and delicious, not to mention cheap to make. It’s traditionally made with collard greens but you could switch it up with kale if you prefer. It’s the ultimate comfort soup that’s healthy and easy to make!

To make a vegetarian version, simply use vegetable broth instead and leave out the chorizo. You could also add in some white beans for some added texture and nutrients.

Ingredients:

  • 2 tablespoons olive oil
  • 8 cups of chicken stock
  • 4 cups of thinly sliced kale or collard greens, stems removed
  • 6 medium potatoes, peeled and roughly chopped into chunks
  • 1 cup cured chorizo, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste

Directions:

  1. In a large sauce pan, heat olive oil over medium heat, add onions and sauté for 3-4 minutes. Add garlic to pan for another minute.
  2. Add in stock, potatoes and bay leaf, cook until soft.
  3. Remove bay leaf and in a blender or using an immersion blender, add contents and puree until smooth. If too thick, add a bit more broth or water to thin out.
  4. Add in sliced chorizo and kale and simmer for another 5 minutes.
  5. Season with salt and pepper.
