Chocolate Covered Strawberries

Nothing says Valentine’s Day treats like chocolate covered strawberries. I shared these faves last year and it was my most requested tutorial. So I’ve put together all of the tips and tricks in perfecting the perfect chocolate strawberry. These cost a fortune if you buy them in store especially around Valentine’s Day, so making them at home is a great idea and they make the most wonderful gift. You can have fun changing up the colours and decorations and make them year round for any holiday!

Ingredients:

  • 1 cup candy melts (wafers), white
  • 1/4 cup candy melts (wafers), red
  • 1/4 cup white chocolate, chopped 
  • 1 pound strawberries, (approx. 20) 
Directions:
 
  1. Wash strawberries in cool water. Spread them out and completely dry before dipping in.   
  2. Mix the white and red candy melts together in a small bowl and microwave for approx. 30 seconds, give the candy a stir and return to microwave for another 30-40 seconds keeping a very close eye so it doesn’t burn. 
  3. Remove from microwave and stir until fully combined. 
  4. Set up some parchment paper to place the chocolate strawberries to dry.
  5. Once the strawberries are completely dried, gently pull back the stems and begin dipping the strawberries by turning and swirling in the melted candy mixture and dipping just under the stem part (leave a bit of the strawberry showing).
  6. Carefully lift the strawberry out and let any excess drip back into the bowl. 
  7. Place the dipped strawberry on parchment paper to dry. Repeat with dipping the remaining strawberries.
  8. Let the chocolate set until dry to the touch.
  9. Melt the white chocolate in the microwave for approx. 30 seconds, stir and return to microwave for a few extra seconds until melted.  
  10. Fit a piping bag with a round decorating tip (I used Wilton tip #2) or fill a freezer bag and cut off a small hole in the corner.
  11. For decorating, you can drizzle the white chocolate over the strawberries moving quickly or pipe small dots. 
  12. Additional ideas for decorating include coconut, crushed nuts or sprinkles.
