Peach Galette

Peaches are such a summer favourite. And a super versatile fruit that can be baked, grilled or tossed in salads but they also make the most beautiful galette. This peach galette may look impressive but it’s incredibly easy to make and the best part is that you can’t go wrong assembling the dough since its meant to have a rustic finished look. I like to call it rustically refined! And a sprinkling of fresh thyme pulls it all together and adds the prettiest touch. A great summer dessert paired with a scoop of ice cream or enjoyed all on its own.

Pastry ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cups cold butter
  • 3/4 cups ice water

Filling ingredients:

  • 5- peaches, sliced into wedges
  • 2 tablespoons butter, melted
  • 2 teaspoon lemon juice
  • 2 1/2 tablespoons flour
  • 1/4 brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • pinch of salt

Glaze & Garnish ingredients:

  • 1 egg, beaten (egg wash)
  • 1 teaspoon granulated sugar (garnish)
  • 1/2 teaspoon thyme leaves (garnish)

Directions:

  1. For the pastry, combine the flour, sugar and salt in a large bowl.
  2. Slice the butter into smaller pieces and using a pastry blender or fork, cut the butter into the mixture until it looks like small lumps.
  3. Slowly pour in the water a little bit at a time, until the dough comes together.
  4. Shape the dough into a disc size and refrigerate for 1 hour.
  5. Once ready to begin assembling the dough, remove from fridge and let stand at room temperature for about 10 minutes.
  6. Preheat oven to 375ºF and a prepare baking pan lined with parchment paper.
  7. On a floured surface, roll out the dough to approx. 12 inches in diameter and 1/8 inch in thickness.
  8. Move the dough onto the baking pan.
  9. Brush the centre of the dough with the melted butter.
  10. For the filling, place the peaches in a bowl, add remaining ingredients and toss together.
  11. Leaving a border, begin arranging the peaches by starting on the outside and working your way towards the middle.
  12. Fold over the edges of the dough towards the peaches, overlapping the folds together.
  13. For the glaze, brush the egg wash over the dough and sprinkle with sugar.
  14. Place thyme leaves over the peaches.
  15. Bake at 375ºF for 45-50 minutes until golden brown.
