Zucchini Herb Fritters

Summer is the perfect time to make use of all those garden zucchinis. This is such a simple recipe and you can change up the herbs and use whatever you have on hand. There’s only a handful of ingredients so they only take a few minutes to put together and they’re great as leftovers. Perfect as a side dish paired with a salad or even in a bun as a sandwich! I just topped these off with a little chipotle aioli or you could also add a little marinara sauce! Enjoy!!

Ingredients:

  • 2 large zucchini, shredded
  • 1/2 cup flour
  • 1/4 cup parmesan
  • 1 egg, beaten
  • 1 tablespoon each, chopped parsley and chives
  • salt, pepper, garlic powder
  • extra-virgin olive oil for frying

Directions:

  1. Grate zucchini, season with salt, toss and let sit for 10 minutes.
  2. In a colander, squeeze out as much liquid as possible from the zucchini.
  3. In a large bowl, beat the egg, add all the ingredients together and mix well.
  4. In a large skillet, add 3 tablespoons of olive oil (or more depending on the size of the zucchini fritters) and pan fry for about 3-4 minutes per side, until golden brown.
  5. Drain on paper towel and serve.
