Pumpkin Loaf

Fall seems to signal all the cozy goodness with soups, breads, and a cup of coffee with a slice of pumpkin loaf is no exception. I find making a loaf to be one of the easiest treats so typically once a week I find myself whipping together one with whatever ingredients I have on hand from banana, lemon, zucchini or apple. This week I went for a recipe that just has to be shared, it’s a copycat Starbucks pumpkin loaf and it’s honestly incredible!

Ingredients:

  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 teaspoon cinnamon
  • 1 2/3 cups flour
  • 3/4 tsp salt
  • 1 1/3 cups sugar
  • 1/3 cup butter, softened
  • 1/3 cup almond milk or water
  • 1/3 cup pepitas, for topping

Directions:

  1. Preheat oven to 350ºF.
  2. Grease a 9×5 loaf pan.
  3. In a medium size bowl combine flour, baking soda, baking powder, cinnamon and salt. Set aside.
  4. Using a mixer, cream together butter and sugar until light and fluffy (about 2 minutes).
  5. Add eggs, pumpkin puree, almond milk and mix well.
  6. Slowly add in dry ingredients and stir until just blended.
  7. Pour into loaf pan.
  8. Top with pepitas.
  9. Bake for 55-60 minutes, until toothpick comes out clean.

This may be a Starbucks copycat recipe but in my opinion it’s actually even better! Enjoy!!
