Peppermint Bark

With the holiday season upon us, there’s so much to do so I always look for the simplest recipes and making peppermint bark could not be easier! You only need chocolate, some extract and candy canes and what you’re left with is the yummiest dessert that makes the perfect treat for last minute teacher or hostess gifts. I always make extra to have on hand for entertaining and my favourite part just might be smashing the bark into pieces because you can’t mess up! Store it in a festive cookie tin with some parchment paper and you’re done!   

Ingredients:

  • 8 oz semi-sweet chocolate
  • 8 oz white chocolate
  • 1/2 tsp peppermint extract
  • 8 peppermint sticks or candy canes, crushed
 

Directions:

  1. Line a baking sheet with parchment paper.
  2. Melt the semi-sweet chocolate in either the microwave or a double boiler on the stovetop using a heatproof bowl. 

  3. Once the chocolate has melted, pour into prepared pan using an offset spatula and spread an even layer. Refrigerate approx. 20 minutes. 
  4. Melt the white chocolate, stir in the peppermint extract and pour over the cooled semi-sweet chocolate layer. Immediately top with the crushed candy cane pieces. Refrigerate approx. 20 minutes.
  5. Once set, remove from the fridge and break into pieces using rubber gloves or a mallet.
