Fall seems to signal all the cozy goodness with soups, breads, and a cup of coffee with a slice of pumpkin loaf is no exception. I find making a loaf to be one of the easiest treats so typically once a week I find myself whipping together one with whatever ingredients I have on hand from banana, lemon, zucchini or apple. This week I went for a recipe that just has to be shared, it’s a copycat Starbucks pumpkin loaf and it’s honestly incredible!
Ingredients:
1 cup pumpkin puree
2 eggs
1/2 tsp vanilla
1/4 tsp baking powder
1 tsp baking soda
1/2 teaspoon cinnamon
1 2/3 cups flour
3/4 tsp salt
1 1/3 cups sugar
1/3 cup butter, softened
1/3 cup almond milk or water
1/3 cup pepitas, for topping
Directions:
Preheat oven to 350ºF.
Grease a 9×5 loaf pan.
In a medium size bowl combine flour, baking soda, baking powder, cinnamon and salt. Set aside.
Using a mixer, cream together butter and sugar until light and fluffy (about 2 minutes).
Add eggs, pumpkin puree, almond milk and mix well.
Slowly add in dry ingredients and stir until just blended.
Pour into loaf pan.
Top with pepitas.
Bake for 55-60 minutes, until toothpick comes out clean.
This may be a Starbucks copycat recipe but in my opinion it’s actually even better! Enjoy!!
